My employer doesn’t give me pay stubs, or doesn’t keep good records about the hours that I work. Are there any penalties for that?

Yes, the penalties for an employer that does not keep good employment records are very stiff. Sometimes, these employers will get sued. And the court or the jury will decide a case against them only because they failed to keep proper records. So, as an employee, this may work in your benefit.
